We have a small herd of dexter and highland cattle that we grass feed and finish to produce the highest quality beef for our customers. Our cattle are rotationally grazed on our pastures in the spring and summer and fed alfalfa hay in the winter. This practice keeps the beef naturally high in omega 3 fatty acids that are crucial for good health. www.berserkerfarms.com Our cattle are raised on chemical-free rotational pasture without antibiotics or growth-promoting hormones. We provide them with alfalfa/timothy hay, fresh grass in the summer and natural mineral with garlic for natural fly control and kelp which is amazing for longevity, fertility and immunity. In the hardest winters, they receive organic alfalfa pellets to provide a little extra energy. Dexters and Highland cattle are smaller in stature than your average commercial cattle breed and so not only do they finish smaller, the cuts of meat are smaller –particularly the steaks. Both breeds mature more slowly than commercial breeds ~they are butchered at 20-24mos and aged for a minimum of 20 days prior to cut & wrap. Our beef is butchered in spring and in fall when the cows are coming off fresh grass. This is when the meat is highest in Omega 3 and CLA and is the healthiest and tastiest!

By the whole or side - Whole Dexter/Highland beefs weigh in around 400-500 pounds compared to conventional production breeds which weigh in around 800-1000lbs for a whole. A side weighs averages 250lbs – so if you usually share a beef or a side with someone, you may find that a whole or side is the perfect size for you.
