Our 1/4 Beef Side comes in around 80 lb with several options to customize at no additional charge.

Crafted to include customers' most requested cuts, the Standard Cut List gives you a variety of cuts so the meals on your table aren't boring.

2 Variations to choose from:

Standard Short Ribs: 2 long, sections per pkg. Each section contains 4 bones. Best prepared by slow cooking or smoking. Cut in between ribs to make smaller pieces for crockpot or stove top braising recipes.

Korean Style Short Ribs: Also known as "flanken-style" each long section is only 1/2" wide. Each section contains 4 bones. Each package contains 4 long sections. Best prepared on the grill but could be baked or slow cooked, too.

Because of the bone-in nature of the short ribs, the packages are fragile and tend to lose their tight seals easier than other cuts. You may receive packages with loose seals. The quality still remains good, they just won't retain their freshness as well, just use them sooner rather than later.

About our Add-on Options:

Delivery:
Depending on the harvest schedule, we may need to deliver your pork or chicken order separate from your beef side. We will do our best to deliver everything at once.

Payment:
Each add on will be created as a separate order. You will receive another order confirmation once we process your add on request. 

Availability:
🐔 Chickens are raised between April-September. Chicken add ons will not be available for delivery between November-March. If you choose to add on chicken between November-March, we will contact you with an estimated pre-order date of our next available harvest and the wait may be between 4-6 months+.

🐷 Hogs are harvested once per month, year round but the schedule doesn't always align well with our beef harvest schedule. That's why your pork add-on may not be ready at the same time as your beef side. You will not be charged a delivery fee if we deliver more than once. 

If you choose an add on, we will contact you directly about your order delivery date. Please watch your email for an order confirmation.

$100 deposit is required for each add on.
Choosing more than 1 add on will result in a larger deposit charged. i.e. add on Family Table Pork Bundle & Chicken Stock up bundle = $200 deposit charged.
