Fish and Tomato Bake.
This month Guest Chef
Angela will teach us to prepare a Nigerian dish called Coconut Fish and Tomato
Bake. A fish dishes like this would have traveled to the Americas with captured
African slaves. The enslaved used local
white fish, herbs, and available vegetables. We’ll
be using ginger, turmeric, red pepper flakes and coconut milk.
