This 300-level ENS course explores Oaxacan society’s rich connections to the environment over the last ten thousand years. Oaxaca is the birthplace of corn, and we will eat and cook corn in many forms, and learn how Zapotec farmers grow corn today. We will visit archaeological sites to learn about the ancient Zapotec people and learn from weavers how they use natural dyes made from local plants and insects to create textiles that express their modern Zapotec identities. We’ll explore the history, economics, culture, and sustainability of native crops like chocolate and agave, hike in the pine covered mountains to learn how Zapotec and Mixtec groups are sustainably managing their forests, and how these communities are facing opportunities and challenges associated with globalization to climate change.
