OPENING PROCEDURE
Step 1
- Turn on brewer for drip
- Espresso Machine
     • Move to counter to the left of the sink
     • Plug in and turn on
          ∆ Make sure it is heating to 200 degrees
          ∆ If it is not heating, run steamer for a few seconds
     • Add water to max line
     • Check and clean out drip pan
     • Run cleaning cycle (3g of urnex)
     • Set up grinder
          ∆ Fully fill with beans
          ∆ Test the weight of a double shot (approx. 19g; 38g liquid) and triple shot (approx. 23g, 46g liquid) grind
     • Place baskets between espresso machine and grinder
     • Place scale next to grinder
     • Place knock box between espresso machine and grinder
     • Place a towel to the left of espresso machine
     • Make sure trash can is to the left of the grinder
     • Shot glasses to the right of the espresso machine
     • Milk pitchers to the right of the espresso machine
     • Place a towel to wipe wand under the front right corner of the espresso machine
- Lids to the right of the espresso machine against the wall
     • Refill if needed

- Make sure sink is clean and emptied out on left side to place milks during production time
- Set up Kettle to the right of the sink
- Set up matcha shaker to the right of sink
- Check and refill stock of cold lids and straws on top of ice machine
- Set hot chocolate/matcha/green tea powders to the right of ice machine
- Set tea boxes along the wall to the right of the ice machine
- Set the 3 liquid tea/lemonade concentrates to the right of ice machine

- POS system - set up to the left of the center beam on front counter
     • Take 3 boxes out from under the counter
     • Put cash box on counter
     • Place ipad on top of cash box
     • Put receipt printer on right side of ipad
     • Plug in power cord into the bottom of the ipad holder
     • Everything plugs into the universal multi port
     • Ipad password - all 0’s
     • Log into square - 1234
     • Put all boxes back under the counter

- Set cups to the right of the ipad - refill if needed
- Set syrups up in 2 rows by using the counter and the first drawer directly to the left of the beam
- Set up cups of our sugars behind the syrups
- Set sauces up in the second drawer directly under the syrups
- Set caramel drizzle to the right of espresso machine
- Set up open/closed signs to the side of the POS system closest to the doors
- Set up merch in front of the POS system
     • Bags of coffee
     • Shirts
     • Mugs
     • Gift cards
     • Stickers

- Make drip
     • Check to make sure brewer is warm
     • Place basket with coffee filter inserted under grinder
     • Grind a total of 3 oz (2 scoops) of full beans from Purefi bag
     • Insert basket into brewer
     • Place carafe under the basket
     • Pour 42 oz of water into brewer
     • Drip will start immediately
     • Repeat process once more to fully fill carafe
     • Place carafe to the right of the ice machine
- Place hot milk carafe to the right of sink
- Fill carafe with hot milk
     • Heat 2% milk up in frother
          ∆ Do this 8 times
     • Pour into carafe
- Fill kettle with water and turn on to heat to 175 degrees
- Wipe down any messy areas made during prep
