The venue have offered us the opportunity of hosting a two-course meal on the Saturday evening of UK PonyCon. This will be a fabulous way to stay in the pony bubble and catch-up with friends and meet new ones after the day-time activities and before the evening activities commence.

The meal will take the form of a buffet of three main dish options with accompanying sides, followed by a selection of cold deserts. As such, we need to select three dishes that will appeal to a broad mix of attendees. The available options are as follows:

Pork shoulder, apple and chestnut mushrooms in a cider and sage gravy
Traditional Beef Lasagne Verdi
Thai red chicken curry with mangos and sweet peppers
Beef Chilli con carne
Shoulder of lamb cooked with apricots, Indian spices and coriander
Pollock, prawn and wild salmon cooked in a tomato, olive and basil stew
Braised shin of beef cooked in ale, with spinach, vegetables and rosemary
Chicken breast pieces & chestnut mushrooms in a mustard & chive cream sauce
Lamb leg cooked in a tomato, garlic and rosemary casserole
Moroccan style chicken stew with chickpeas and mint
Courgette, pepper and cannellini bean in a rustic tomato herb sauce (vegetarian)
Chickpea, spinach and sweet potato Balti (vegetarian)
Roasted vegetable and split pea lasagne (vegetarian)
Cauliflower, stilton and walnut bake (vegetarian)
Vegetable tagine with apricots and almonds (vegetarian)
Courgette, pepper and cannellini bean in a rustic tomato herb sauce (vegan version)
Chickpea, spinach and sweet potato Balti (vegan version)
