Fondant is rolled thin and with a buttercream and/or ganache underneath, as well as in between the layers. Your guests will get a delicious and balanced amount of cake and frosting. Fondant is not intended as the main frosting to be eaten, as it is usually aesthetic and used to achieve certain modern designs that are just not always possible with buttercream. Ganache is a made using either white chocolate, milk chocolate, or dark chocolate. The white chocolate can be colored. Ganache holds up best since cakes will be out for extended periods of time as it sets firm but not hard. Even if a layer of ganache is under the fondant or buttercream you will want to use ganache at some point on the cake.
