When expressing appreciation it is important to share specifically what they did. You can describe the impact of what they did. It can be the impact on you personally, on your work/school/class, etc. Finish by letting them know how they made you feel and why you appreciate it.

Example
Mr. Smith I really appreciate the way you use the breakout rooms. It makes class more fun to jump in and out of rooms with other students. It keeps me on my toes and let's me see all the other kids in class. I just wanted to say thanks for all the organization.
