Thank you for your purchase of locally raised pork!  Please complete the form below to help us provide the exact meat cuts that your family will enjoy.  We coordinate all processing details through our certified meat locker in Dyersville, Iowa.  Your quoted meat price includes standard processing and to-your-door delivery.  Standard delivery includes locker handing fees, cutting, wrapping, and freezing of your cuts.  Bacon curing, slicing, and freezing is also considered standard processing.  Some cuts will create an additional processing fee (any additional curing, casing, or seasoned sausage for example.)

Hams - Choose your cuts *
Hams can be either wrapped as a traditional roast OR as sliced ham steaks.
Hams - Fresh or Cured? *
Either of the cuts you chose above can be left fresh OR cured. Please make your preference known below.  If you prefer a different mix, please indicate in the "other" box.
Hams - wrapping preference
Ham roasts are generally 2-3# each and wrapped individually.  Ham steaks are generally wrapped ONE per package.  This is the default order.  Please indicate if you prefer otherwise.
Bacon *
One of the most popular cuts!  The most popular choice is for the bacon to be thick sliced and cured.  For those looking for a non-cured option, this cut can also be wrapped fresh.  This cut is what is known as side pork.

Chops *
Iowa Chops are 1.5" thick and regular chops .75" thick.  After choosing thickness, chops can be wrapped fresh OR cured.

Shoulders *
A pork shoulder can be either made into a roast or sliced into pork steaks, an excellent grilling cut.  A shoulder roast is the ideal cut to slow cook and shred for BBQ pulled pork or a Mexican flavored pork carnitas.

Shoulder roasts are generally around 3# and are packaged individually.  Pork steaks are often packaged 2 per package; this is the default order.  If you prefer otherwise, please indicate below.
Hocks *
Hocks are a bone section with meat attached.  This soup bone is perfect for a hearty bean and bacon soup or split pea soup.  If not kept, the bone will be cleaned and the meat added to your ground pork choice below.
Ribs *
Pork ribs are a tasty and hearty dish perfect for grilling, slow cooking, or crock pot.  Ribs are typically cut, wrapped, and frozen.  If you prefer to not have ribs as part of your order, they can also be cut and added to the ground meat.
Ground Pork *
The choices are MANY!  Plain ground pork can be used in many of the same ways as other ground meats.  Simply sub ground pork for any of the other ground meats in your favorite recipe or even grill pork burger patties.  For more variety, ground pork can also be seasoned, smoked, and put in casing in a variety of ways. For a half-hog purchase, choose *up to TWO* options for your ground meat.  Plain (unseasoned) ground pork as reflected in option one is included in the purchase price.  The other ground pork selections (shown as ***) do create additional processing costs that will be added to your invoice.  We only charge the actual processing costs as charged by the meat locker!

Please indicate if you want any of the organs wrapped and frozen.  Some families enjoy eating organ meat.  Others like sharing organ meat with their favorite pet!
