Overview:

      Matter is made up of many small particles which have lot of space among them. These  particle are in continuous random motion and, hence, acquire kinetic energy at all temperatures. Matter can exist as solids, liquids or gases depending on the strength of  inter-molecular forces between the particles. On supplying   heat energy , the particles start vibrating with greater energy. Due to this increased kinetic energy, the particles overcome the mutual  force of attraction undergoing a phase change. During melting or vapourization process, the temperature remains constant as the applied  heat energy (called the Latent Heat) is utilized to effect a change of phase.  On applying Pressure, the particles of matter can be brought close together and the state of matter can be changed. This is the process by which various atmospheric gases like Oxygen, Nitrogen , Carbon dioxide  are liquified for use for various purpose in our daily life. The phenomenon of changing of a liquid into its vapour state at any temperature below its boiling point is called evaporation. Evaporation is basically  a surface phenomenon. Evaporation produces cooling. The degree of evaporation is affected by various factors such as the  exposed surface area, wind speed, humidity , temperature etc.
