If you want to cook along, you will need the following ingredients:
1 1/2 cups uncooked rice (brown or white, we will cook it during class, but you can cook it ahead if you like)
1 can of corn (you can use frozen or fresh corn instead)
1 can of black beans
1 red bell pepper OR 2 tomatoes
1 green bell pepper (optional, you can leave this out)
3 celery stalks (optional, you can leave this out)
1 bunch of green onions
1 bunch of cilantro
⅓ cup red wine vinegar
⅓ cup olive oil
½ teaspoon pepper
1 teaspoon salt
1 teaspoon cumin
