This salad is a family favorite! It's a light and refereshing meal for hot summer nights. It keeps for at least a week in the fridge and is a great addition to quesadillas or tacos. It's also perfect for potluck dinners.

You will need the following cooking tools for class: knife, cutting board, measuring spoons, measuring cups, large bowl to contain the salad, pot with lid for cooking the rice
No ingredients will be supplied for class.  You will need to buy your own if you want to cook along.  If you don't want to buy ingredients, you can join class just to watch and learn. 

If you want to cook along, you will need the following ingredients:

1 1/2 cups uncooked rice (brown or white, we will cook it during class, but you can cook it ahead if you like)

1 can of corn (you can use frozen or fresh corn instead)

1 can of black beans

1 red bell pepper OR 2 tomatoes

1 green bell pepper (optional, you can leave this out)

3 celery stalks (optional, you can leave this out)

1 bunch of green onions

1 bunch of cilantro

⅓ cup red wine vinegar

⅓ cup olive oil

½ teaspoon pepper

1 teaspoon salt

1 teaspoon cumin
