Piper's Vegan Oatmeal Cookies
Ingredients:
1/2 cup vegetable/canola oil
1 cup packed brown sugar
1 ripe banana
2 teaspoons vanilla
1 1/2 cup large-flake rolled oats (instant work ok too)
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips and/or raisins
Directions:
Mash the banana. Think about someone who has wronged you, this tends to help.
Then whip banana with the sugar, oil, and vanilla until creamy. Resist the urge to eat this part alone.
Ok just a taste.
In a separate bowl whisk together flour, oats, baking powder, baking soda, and salt.
Fold dry ingredients into the wet mixture until just combined.
Mix to incorporate chocolate chips and/or raisins (I like to put in some of both).
Some will refuse to mix in, that's ok. Just stick them into the cookies by hand later.
The recipe I adapted this from calls for 1 1/2 cups chocolate chips, but that's gross so don't do it.
Scoop heaping tablespoons of dough onto a lined cookie sheet around two inches apart or how you see fit.
Sometimes I just do this by hand. Either way it gets sticky and annoying. An ice cream scoop works too.
Bake at 375°F for 12 minutes or until golden (don't over-bake them unless you like your cookies crunchy).
Flip the tray halfway through if you remember, I usually don't.
Makes 9-12 cookies depending on the accuracy of your measuring and how big/small you like your cookies. Sometimes I also mix in some cinnamon, chia seeds, or rosemary (rosemary with chocolate only, no raisins), depending on my mood.
