DOUNDRINS DISTILLING 2nd BI-ANNUAL ‘BOOZE-N-BONES’ BBQ COOK OFF COMPETITOR INFORMATION - May 18th

$500 for 1st, $250 for 2nd, & $100 for 3rd in both meat categories

$250 for 1st, $125 for 2nd, & $50 for 3rd in cocktail category - MUST document & turn in recipe with submission


All competitors will do 6-8 racks of ribs and 10-20 lbs of wings. 


1.  Entry fee is $100 – Competition categories will be baby back ribs, wings, & a Doundrins cocktail.  All ribs & wings will be provided.  A bottle of Doundrins spirits will also be provided to each team.
2. The event takes place on May 18th, 2024 at Doundrins Distilling.  Address is 300 Progress Dr., STE F, Cottage Grove, WI 53527.  Check in & set up can begin at 7:00 a.m. and should be done by 9:00 a.m. This will allow you the time needed to retrieve your ribs, set up and marinade/dry rub/smoke if needed. If you do not need that much time, you have until 9:00 a.m. for the check-in deadline. A MANDATORY meeting will be held at 9:00 a.m. when numbers will be drawn to pick ribs & type of alcohol so, please arrive on time. TEAM CAPTAINS ARE REQUIRED TO ATTEND. 
3. Judging starts and samples need to be turned in for judging as follows:
                          a. Wings turn in at 4:00 p.m.
                          b. Ribs turn in at 4:30 p.m.
                          c. Cocktails turn in at 5:00 p.m. - MUST document & turn in recipe w/ all ingredients & measurements in oz. with submission (bring a jigger)
4. This is intended to be an extremely fun, family-friendly event – if you are looking for a serious competition, this might not be for you. 
5.    Any type of smoker or grill can be used, however, if your team will need electricity, please include that on the entry application (we reserve the right to limit the number of competitors that need electricity due to facility limitations).
6.     All registered cooking teams shall consist of one captain and a maximum of 3 other teammates.
7.     Each team will have access to our on-site 3 compartment sink for washing dishes.  We will also provide a sanitizer wash bucket for you to clean your area with.
8.     Food handling gloves must be brought by competitors and must be worn at all times when handling food. 
9.     All competitors are subject to Health Department rules – please keep the cooking area clean. Shoes and shirts must be worn at all times.

11.     Any barbecue sauce can be made prior to the event and brought with you on the day of the competition. Sauce must be used in the cooking process – sauce may not be served on the side. The ribs must be cooked from start to finish on premise and cooked to a temperature of 160 degrees. 
12.     If special accommodation is requested, we need that included on the entry application, so we are aware of it ahead of time. 
13.     A coal dump area will be provided.
14.     Doundrins will be selling tickets for people to purchase to get samples of ribs/wings.  Cocktails will only be for the judges.  Disposable dishware for this purpose will be provided by Doundrins.
15.     We are planning on 15-20 competitors. The first paid and completed entry forms (online) received will be added to the competitor list. If we fill up, you will be placed on a waiting list. 
16.     We anticipate a judging panel of 4-5 people. 
17.     Styrofoam boxes will be provided for your rib and wings delivery to the judges. No garnish will be allowed. 
18.     All grills and equipment must be removed by 11:00 p.m. the same day.
19.     Due to space/parking limitations, TRAILERS ARE NOT ALLOWED IN THE PARKING LOT during the event - further instructions to participants on where you can park them will be given that morning.
20.     Digital marketing materials will be sent to all selected competitors.
21.     The event will be held Rain or Shine.
22.     Drinking – there will be NO CARRY INS ALLOWED. Offenders will be disqualified and asked to leave the event. Doundrins will buy up to 3 x 12 packs of your chosen beer and bill it back to you at our cost (no markup). Beer requests will be indicated on the sign-up form.
23.     Judging will be based on Taste, Texture, Tenderness and Presentation. Prizes will be based on total combined points. Judging will proceed as follows:

1. Judging is not comparative. Each entry is judged on its own merit.
2. Two scores will be given:
a. Appearance
b. Taste & Tenderness
3. Each entry will be scored 2 through 9 on each category.
9-Excellent 6-Average 3-Bad
8-Very Good 5-Below Average 2-Inedible
7-Above Average 4-Poor
4. Total Score = Total Appearance + Total Taste & Tenderness
