Shun Paring Knife: I use this mainly for food preparation on a wood cutting board. There are a few chips in the edge that need to be worked out and it has never been quite right.

Tiger Claw Sharpening does not offer factory restoration of knives or custom regrinds, nor do we restore serrations. Each knife grind is slightly different and the final consistency as well as sharpness of an edge is partially dependent on the acuity and consistency of the primary knife grind from the maker. When a knife grind is thick, sharpening the edge from heel to tip may substantially widen the edge. Edge widening is often most apparent towards the tip of the knife.

Sharpening involves contact between a knife and an abrasive material to remove and polish steel. Due to the composition of some steels and the action of sharpening, there is a risk that all parts of the knife, including the edge, will show grind lines and light scratches from contact with stones, strops, and other surfaces. In our experience, some steels are more likely than others to accept casual marks whereas some steels are nearly impervious. While we take care with each knife, this service is not meant to preserve the original aesthetics of the knife. Tiger Claw Sharpening involves modification of the steel through use of an abrasive material at different grit sizes.

Sharpness is a combination of knife design, edge angle (general geometry), and grit polish, all in the context of the way a knife will be used. A knife designed for daily utility tasks may be optimized with an edge slightly different than a kitchen knife. The more we know about how a knife will be used, the more we can find a sweet spot between your needs and the maker's design.

There are no warranties, express or implied, for Tiger Claw Sharpening. We would like each customer to have a perfect edge and a positive experience. However,  we do not accept any liabilities related to the knives in our care. All work is performed with the understanding that sharpening can alter a knife's value, looks, and performance. Additionally, all work is performed with the understanding that shipping knives comes at a risk of total loss during transit. Tiger Claw Sharpening does not accept liability for a knife's value or replacement due to losses during shipping to and from our shop.
